At Don’t Call Me Pepperoni, we believe pizza is far more than what the world has come to expect. It’s not just a slice — it’s a culture, a craft, and a story that deserves to be told in all its richness.

Our mission is simple: to bring the lesser-known, authentic expressions of Italian pizza to a global stage. Beyond the classics, Italy is home to an incredible diversity of styles, techniques, and traditions — many of which remain undiscovered outside their regions of origin.

That’s why we’re passionate about introducing unique creations like pizza fritta, golden and indulgent; pizza baciata, light yet satisfying with its signature “kissed” layers; and pizza al ruotino, perfectly crisped and baked in small pans for a bold, flavorful bite.

Every pizza we serve is rooted in tradition, but driven by curiosity. We honor the heritage of Italian baking while reimagining how it can be experienced today — whether you’re a lifelong pizza lover or discovering something entirely new.

There comes a moment when you realize that playing it safe is no longer enough.

After years spent behind a camera capturing other people’s stories, and behind a screen building digital ones, I felt something was missing. I wasn’t creating something of my own — something real, something you could touch, taste, and share.

So I made a decision. I walked away from everything I knew to follow a dream that had been quietly growing inside me for years: opening a pizzeria in the United States.

I went back to where it all begins — Naples. I trained in one of the best pizza schools in the world, immersing myself in the craft, the discipline, and the culture that define true Italian pizza. Then came a short but intense experience in Naples itself, where I learned that pizza isn’t just food — it’s identity, pride, and tradition.

But I didn’t want to simply replicate what already exists. I wanted to bring something new. Something different.

That’s why I chose Texas.

A place full of energy, openness, and opportunity — the perfect ground to introduce a new vision of pizza. Not just the classics people expect, but the ones they’ve never seen before. The ones that tell a deeper story of Italy.

Don’t Call Me Pepperoni was born from that leap. From the courage to change, to risk, and to build something meaningful from scratch.
